The Bongard ATHENA is a reach-in retarder with unparalleled versatility. Designed for you to place each tray in by hand on tray slides that you can easily adjust to different heights to accommodate pastries and/ or bread.

Compact, modular, easy to use, and gives you complete control over your retarding set-up. Save your recipes and set a pre-cooling stage, a retardation stage, multiple fermentation stages, and a sleep mode stage.

Achieves temperatures from -10°C (14°F) to +10°C (50°F). It is adapted to low-temperature retarding over a long period of time.

Comes with a door sensor to automatically adjust ventilation and minimize changes in temperature while you have the door open.
