The Bongard HERA is a reach-in retarder proofer with unparalleled versatility. Designed for you to place each tray in by hand on tray slides that you can easily adjust to different heights to accommodate pastries and/or breads.

Compact, modular, easy to use, and gives you complete control over your proofing set-up. Save your recipes and set a pre-cooling stage, a retardation stage, multiple fermentation stages, and a sleep mode stage.

Achieves temperatures from -15C (5F) to +40C (104F). Can Proof with humidity as low as +6C (42.8F), allowing you to slow proof over longer periods.

Can be set to change from retardation mode to proofing mode to minimize night or early morning work. Comes with a door sensor to automatically adjust ventilation and minimize changes in temperature while you have the door open.

Just use a scraper to clean the bottom floor in the unit
