The Mono Deck Oven: Harmony is one of the most versatile deck ovens on the market today. Its modular design allows it to fit through a standard-sized door and can even be installed at stair-only access (basements) locations. Its modularity also allows you to add decks later, allowing you to upgrade your production capacity without getting a new oven as your bakery grows.

Designed with an eye to energy efficiency, it includes energy-saving sleep mode, halogen lighting, and auto shutdown. Reduce energy consumption by only heating the decks needed.

Available with decks that are 1, 2, 3, or 4 tray widths available (3 is the most popular), with up to a maximum of 5 baking decks.

Touch Screen Control & Flexibility

The touch-sensitive screen provides a colorful, user-friendly interface via an icon-driven menu system, providing the baker with a visual update of each stage of the baking process. A total of 240 bake programs can be stored across 12 Product Categories, with each bake program containing up to 6 distinct phases. Choose to alert staff with either a voice alert or

custom alert tones. Includes a 7-Day Timer to preprogram the oven to reach the desired optimum pre-bake temperature at a specific time for each day. This time-saving feature means the ovens are immediately productive right from the start of the shift. In total four separate events can be programmed daily to provide further flexibility and additional control if required. Also includes an advanced diagnostic tool with a live visual reading of the oven’s current status.

Patented Cumulus Steam Generating System

The unique, patented Cumulus Steam Generating System produces a plentiful supply of saturated steam generated by the oven itself; removing the need for a conventional boiler and reducing energy consumption. In fact, the Cumulus system reduces the kW rate of each deck compared with ovens using traditional steam pods.
A clever Isotherm Recovery program also triggers automatically to regain oven chamber temperatures for the perfectly finished crust rapidly. All decks are supplied from a single water supply via a manifold system.

 

A Base that’s Right for You

The base of each oven is customized to the number of oven decks you order,  ensuring a comfortable working height for your staff. Each base comes with wheels for accessible means of moving the oven for cleaning or repositioning. Depending on the number of deck combinations, if there is sufficient space in the base unit, there is also the option to have it racked out to hold baking trays.
