Two Cells, Independent Control

Unique retarder proofer cabinet,  allowing you to proof or retard, two different products at the same time. This unit has two control panels, each for each cell.

This proofer shares technical features with other reach-in retarder proofers from Panem. It is a reach-in version for craft bakers or industrial use; the proofing temperature is between +15°C to +40°C and allows proofing for all kinds of dough- bread, buns, and pastries.

Outside, sturdy, stainless steel construction with limited corrosion risk, pre-enamelled inside for easy cleaning and maintenance. Door hinges are reversible, and closing is eased by the door closer.

This unit is equipped with an electronic thermostat and a mechanic humidistat.

If your space is limited by ceiling height, this is a solution for you. This retarder proofer can work with 8 feet (2,44 metres).
