This proofer shares technical features with other reach-in retarder proofers from Panem. It is a reach-in version for craft bakers or industrial use; the proofing temperature is between +15°C to +40°C and allows proofing for all kinds of dough- bread, buns, and pastries. Outside, sturdy, stainless steel construction with limited corrosion risk, pre-enamelled inside for easy cleaning and maintenance. Door hinges are reversible, and closing is eased by the door closer. This unit is equipped with an electronic thermostat and a mechanic humidistat. If your space is limited by ceiling height, this is a solution for you.
