This retarder proofer shares technical features with the Panem Reach-in Retarder Proofer Cabinet. The main difference is in size, as this model, AA24B4, fits two sideways( 48 trays total). This makes it a perfect match for high-volume production bakeries.

This unit is a reach-in version for craft bakers or industrial use. They are designed for proofing from +15°C to +40°C and allow proofing for all kinds of dough- bread, buns, and pastries.

Thanks to sturdy construction, it has limited corrosion risk. The chamber is stainless steel from the inside, and the outside is pre-enamelled. Door hinges are reversible.

This unit is equipped with an electronic thermostat and a mechanic humidistat. The closing is eased by the door closer.

If your space is limited by ceiling height, this is a solution for you. This retarder proofer can work with 8 feet (2,44 metres).
